Recipe: Fudge Frosting

Fudge Frosting

4 squares unsweetened baking chocolate
1 1/3
cups milk
4 cups sugar
1/2 teaspoon salt
2 Tablespoons light corn
syrup (or golden syrup)
2 Tablespoons butter
1 teaspoon vanilla extract

Place chocolate and milk into a pan and stir over low heat until chocolate is melted. Add sugar, salt and corn syrup, stirring until sugar has melted, then bring to a boil. Cover and boil for 3 minutes. Uncover and cook until a little will form a soft ball when dropped into cold water. Remove from heat, add butter and vanilla, then let cool. When lukewarm, beat until mixture is creamy and thick enough to spread.
Makes frosting for 1 1/2 layer cakes.
