Recipe: MOUNDS BAR RICE PUDDING

MOUNDS BAR RICE PUDDING
Serves 8

2 cups cooked brown rice HOT (can use white, instead)
1 can (16 oz) coconut milk
1-2 tsp sugar/sweetener if desired
1 cup sweetened shredded coconut
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips (or carob chips)
Sweetened whipped cream, or vanilla yogurt, or sweetened almond or soy milk, if desired
Additional chips or coconut shreds if desired for garnish
