MAIN DISH SALADS---3 RECIPES

MEDITERRANEAN TUNA SALAD---Empty two 8 oz bags Mediterranean salad greens or other salad greens mix into a bowl. Add 2 small cucumbers, peeled and sliced, 8 oz cooked green beans, 1 pint grape tomatoes, 12 oz can tuna in oil, drained, 1/2 cup each Greek salad dressing and crumbled basil and tomato feta cheese and 12 mixed kalamata olives. Toss to mix.

HAM & CHEESE SALAD---In a bowl combine 10 oz bag baby spinach, 4 cups coleslaw mix, 10 oz ham and 4 oz Cheddar cheese, both cut in matchstick pieces, and 1 Gala apple, cut in thin wedges. Add 1/2 cup honey Dijon dressing. Toss to mix.

GRILLED VEGETABLE & COUSCOUS SALAD---Cook 5.8 oz box roasted garlic and olive oil couscous mix as box directs. Heat outdoor grill. Cut 3 small zucchini in half lengthwise and 1 large yellow bell pepper in quarters, brush veggies with 1 tbs balsamic dressing. Grill 10 min. or until crisp tender. Cool slightly before cutting veggies bite size. Cut 2 medium tomatoes in wedges and trim 1 bunch arugula. Put all in a serving bowl. Add 1/2 cup balsamic dressing, toss to mix.

EACH RECIPE MAKES 4 SERVINGS OF SALAD.
