Plantation Coffee Pralines
2 c. sugar
1 c. buttermilk
1/4 c. water
1 T. instant coffee powder
1 tsp. baking soda
1/8 tsp. salt
2 c. chopped pecans
2 T. butter, softened
2 tsp. vanilla extract
Combine first 6 ingredients in a large Dutch oven; bring to a boil, stirring constantly. Cook over medium heat, stiffing constantly, until mixture reaches soft ball stage (236F). Remove from heat and stir in remaining ingredients. Beat vigorously with a wooden spoon until mixture just begins to thicken. Working rapidly, drop by rounded tablespoonfuls onto greased waxed paper; let cool. Makes 2 dozen.
