Recipe: ROASTED CHICKEN WITH CARAMELIZED ONION SOUP

2 cups roasted chicken, cut into strips
2 tsp vegetable oil
2 medium onions, thinly sliced
8 cups chicken broth
1/4 tsp pepper
2 medium carrots, sliced
2 stalks celery, sliced
3/4 cup uncooked trumped shaped pasta

1. Heat the oil in a skillet. Add the onions and cook until they begin to brown. Reduce the heat. Cook until the onions are tender and caramelized. Remove the skillet from the heat.
2. Heat the broth, pepper, carrots and celery in a saucepan to a boil. Stir the pasta and chicken in the saucepan. Reduce the heat. Cook 10 min. or until the pasta is tender. Stir in the onions and serve immediately. MAKES 6 SERVINGS OF CHICKEN & SOUP.
