1/2 pound salmon fillet
14 1/2 oz box rotini pasta
2 cups fat free half and half
2 tsp cornstarch
1/4 tsp salt
1/4 tsp nutmeg
1/8 tsp cayenne pepper
10 oz box frozen peas, thawed
1/2 cup grated Parmesan cheese
1/3 cup toasted walnuts, coarsely chopped
1. Heat oven to 450 degrees. Coat a small baking pan with cooking spray. Add salmon to pan and bake 12 min. or until fish flakes easily. Keep warm.
2. Cook pasta following package directions. Drain and return to pot.
3. Whisk together half and half, cornstarch, salt, nutmeg and cayenne. Place in saucepan and bring to a boil. Simmer 1 min. or until sauce thickens. Add peas and simmer until peas are heated through. Remove from heat, stir in 1/4 cup cheese.
4. Stir sauce into drained pasta. Remove skin from salmon and discard. Flake salmon into bite size pieces and stir into pasta. Top with remaining cheese and the nuts and serve.
MAKES 6 SERVINGS.
