1 cup chicken broth
2 tsp grated lemon zest
3 tbs lemon juice
2 tbs soy sauce
1 tbs cornstarch
1 pound chicken tenders, cut crosswise in 1/2" wide slices
1 tbs cornstarch
1/2 tsp salt
1/4 tsp pepper
A little oil
1 pound asparagus, cut in 1 1/2" pieces
1. STIR broth, zest, juice, soy sauce and cornstarch in a bowl to blend. Mix 1 tbs cornstarch, salt and pepper in a plastic food bag.
2. ADD chicken, shake to coat. Heat a little oil in a skillet. Add chicken, stir fry 2 min. Add asparagus, cook until tender. Add broth mixture. Cook, stirring until slightly thickened, then serve.
MAKES 4 SERVINGS.
