FRESH FRUIT SALAD WITH POMEGRANATE SYRUP
1/3 cup pomegranate juice
1/4 cup sugar
1 tsp orange zest
2 navel oranges, sectioned
2 kiwis, peeled, sliced
1 banana, sliced
1 Granny Smith apple, cut into slices
1 Red Delicious apple, cut into slices
1 pear, cut into slices
1/2 pineapple, peeled, cubed
1/2 cup pomegranate seeds
Combine juice and sugar in a saucepan, bring to a boil, stirring until sugar dissolves. Remove from heat and stir in zest. Let stand until room temp. Combine orange, kiwis, banana, apples, pear, pineapple and seeds in a bowl, pour syrup over fruit and toss to coat. MAKES 8 CUPS OF FRUIT SALAD
