Recipes: Molasses Cookies

Molasses Cookies (Makes 8 Dozen)

1 cup shortening
1/2 lb light brown sugar
1 pint dark baking molasses (usually called Brer Rabbit brand - NOT used on biscuits - bitter)
2 cups buttermilk (I use regular milk - add a TBS of vinegar to it)
6 cups flour
1 TBS baking soda

Cream shortening and sugar. Add molases and buttermilk. Stir in flour and baking soda.
Drop in large dollops from teaspoon onto cookie sheet. Bake at 375 for 8 minutes
