Saucy Beef Roulades Continental

1 1-1/2 lb round steak, ¼ inch thick

1-1/2 C herb-seasoned stuffing mix

¼ C finely chopped celery

¼ C minced onion

2 T shortening

1 10-3/4-oz. can tomato soup

1/8 t oregano

1 small clove of garlic, minced

Pound steak; cut into 6 long pieces. Combine stuffing mix, celery and onion; place small amount on end of each steak piece. Roll up; fasten with skewers. Brown in shortening in skillet. Pour off fat; add soup, ½ cup water, oregano, and garlic. Cover; simmer for 1 hour and 30 minutes or until tender, stirring occasionally. Arrange on platter; serve with whole green beans and white onions, if desired.

Yield: 6 servings
