Recipe: Swiss Steak

Swiss Steak

1-1/2 lb round steak, 1 inch thick

½ C flour

1 10-1/2 oz. can consommé

½ t salt

1/8 t ground cloves

1 t paprika

1 large bay leaf

¼ t marjoram

¼ t thyme

1 small onion, chopped

4 carrots, chopped

1 C sour cream

Trim fat from steak. Pound flour into steak; brown in small amount of fat in Dutch oven. Add consommé, salt and spices; cover. Simmer for 1 hour and 30 minutes. Add onion and carrots; cook for 1 hour and 30 minutes longer, adding water if necessary. Stir in sour cream.

Yield: 4 servings
