Recipe: Chicken or Turkey Hash

Chicken or Turkey Hash


3 T butter

½ C chopped onion

1 t rosemary

2 C cubed cooked chicken or turkey

2 C cubed cooked potatoes

1 c chicken or turkey gravy or heavy cream or mixture of both

Salt

Freshly ground pepper

1 T finely chopped parsley


Heat the butter in a large skillet until foaming. Add the onion and rosemary and cook until the onion is soft. Add the chicken or turkey and potatoes, stir well, and cook for 3-4 minutes, pressing down with a spatula to form a flat cake. Lower the heat to medium low and pour in the gravy and/or cream. Sprinkle with salt and pepper and cook for 5 minutes more. Turn out onto a serving platter and sprinkle with parsley.
