Recipe: Chicken Sausage Patties

Chicken Sausage Patties

Serves 6


3 chicken breast halves, skinned & boned

6 chicken thighs, skinned & boned but with bits of solid yellow chicken fat attached

1 t salt

Freshly ground pepper to taste

F1/2 t poultry seasoning

¼ t sage

2 T vegetable oil



Cut the chicken meat into chunks and chop in a food processor or put through a meat grinder. It should resemble coarse ground meat. Put in a mixing bowl and add the salt, pepper, poultry seasoning, and sage, and mix well. Form into 6 small patties. The meat is sticky to handle so dampen your hands with water. Heat the oil in a skillet and cook the patties over medium-high heat, turning once, about 3 to 4 minutes on each side, or until browned and done in the center.
