Recipe: Roast Guinea Hen

Roast Guinea Hen

Serves 4

Because guinea hen is naturally dry, it should be covered with sheets of barding fat during roasting.

2 young guinea hens

Salt

Freshly ground pepper

¼ lb. salt pork, in thin sheets

Preheat the oven to 350°F. Rub the guinea hens liberally inside and out with salt and pepper. Place them on a rack in a shallow roasting pan and lay sheets of salt pork over the breasts. Roast for 45-60 minutes.
