Recipe: Grilled T-bone Steaks

Grilled T-bone Steaks

Serves 4

A pat of flavored butter, place on each hot steak just before serving, melts slowly and makes a delicious bit of sauce.

Tarragon Butter

4 T butter

1 t dried tarragon, crumbled

2 T chopped parsley

¼ t salt

¼ t freshly ground pepper

Steaks

4 T-bone steaks, about 1 inch thick

Salt

Freshly ground pepper

To make the herb butter, beat the butter, tarragon, parsley, salt, and pepper together until blended. Form into a rough log, wrap in wax paper, and chill. Have a barbecue fire ready. Sprinkle the steaks with salt and pepper to taste and grill them, turning every minute or two, about 8 minutes total for rare, 10 minutes for medium, and 12 minutes for well-done. Top each steak with a slice of the herb butter before serving.

Pepper Steak

Sprinkle the steaks lightly with salt, and rub about ½ T coarsely crushed peppercorns into each side. Press firmly into the meat and grill as directed.
