12 pound turkey, thawed, all giblets removed
1/2 cup unsalted butter
2 tbs salt
2 tsp pepper
2 stalks celery, cut in pieces
1 sweet onion, cut in half
1 large carrot
2 cups boiling water
Heat oven to 500 degrees. Rub the butter on the outside and in the cavity of the turkey. Sprinkle salt and pepper on the inside and outside of the turkey. Put the celery, onion and carrot in the cavity. Place the turkey breast side up in a roasting pan. Pour boiling water into the pan. Cover with a tight fitted lid and put the pan in the oven. Start a timer when oven temp returns to 500 degrees. Bake 1 hour and turn off the oven. (Do not open the oven door). Leave the turkey in the oven until the oven cools. Then take turkey out, slice and serve. MAKES 20 SERVINGS OF TURKEY.*
BACON & CARAMELIZED ONION ASPARAGUS
Cook 3 slices of bacon in a skillet until crisp, turning frequently. Drain bacon on paper towels. Discard drippings from skillet. (Do not wash skillet). Place 1 1/2 pounds asparagus spears, trimmed, in microwaveable casserole dish or a 10x4" dish. Add 1 tbs water. Microwave on high 5 min. or until asparagus is crisp tender. Add 1/2 cup chopped onions to skillet, cook and stir until crisp tender. Stir in 1/2 cup Ranch dressing. Drain asparagus, top with sauce and crumbled bacon.
MAKES 6 SERVINGS OF ASPARAGUS.
